Ingredients

1 medium onion, chopped
3-4 celery ribs, chopped
2 tbsp. olive or vegetable oil
2 cups chopped fresh tomatoes
2 garlic cloves, minced
2 tbsp. minced fresh parsley
1 tbsp minced fresh oregano
1-3 tsp. minced fresh cilantro
1 tsp sugar
cooked pasta

In a large saucepan, saute onion and celery in oil until tender.  Stir in next 6 ingredients and simmer for 5 minutes.  Serve over pasta.  Yields about 2½ cups of sauce.

Ingredients

2½ cups mashed potatoes (with milk)
1 cup cream-style cottage cheese
½ cup sour cream
3 eggs, separated
2 tbsp minced fresh oregano
2 tbsp. minced fresh parsley
½ tsp seasoned salt
2 tbsp butter or margarine

In a large bowl, combine potatoes, cottage cheese, sour cream, egg yolks, oregano, parsley, and seasoned salt.  In a mixing bowl, beat the egg whites until stiff peaks form; fold into potato mixture.  Transfer to a lightly greased 2½ quart baking dish.  Dot with butter.  Bake, uncovered, at 350º for 1 hour or until lightly browned. Yields 6-8 servings.
